Development and characterization of edible films
Scope description:
The present activity concerns professionals and researchers occupied within the general field of food science. The aim of the activity is to train and/or provide access to research equipment in order to allow users to develop protein-based edible and/or biodegradable films (membranes).
Laboratory to which access is provided:
Laboratory of Food Chemistry and Industrial Fermentation, Ionian University.
Laboratory equipment that will be available:
Fully equipped laboratory including freeze dryer, high speed digital homogenizer, ATR-FTIR, texture analyzer, controlled temperature and humidity chamber.
Methods that are used in the laboratory:
The Laboratory has established protocols for the development of edible and/or biodegradable films and the analysis of physico-chemical properties.
Permitted time for access to the laboratory:
Access to the laboratory facilities and equipment is provided for 3 days per user (indicatively).
Time period for access to the service:
1 June – 15 July 2023
Information – Clarifications:
The Laboratory of Food Chemistry and Industrial Fermentation consists of experienced and specialized researchers along with the required equipment to develop edible and/or biodegradable films using protein sources as the starter material and their subsequent characterization regarding physico-chemical properties. Each user can select and procured their preferred (protein) sources or utilize respective sources available in the laboratory. At the end of the process, the user will be able to receive the produced edible films and the analysis results.
Each user can develop up to one (1) protocol for the production of edible films and conduct a complete characterization of physico-chemical properties.
Maximum number of users: two (2).
